
The pleasure of eating. Here’s what I’ve realized about eating well. It’s about enjoyment. When I eat mindlessly, to just fill my belly, I end up with, yes a full belly – sometimes a painfully full belly – but then I’ve got no after taste in my mouth. Eating beautiful food makes you savor every bite. Every bite count.
This was a great plate to make for lunch. One of the best things about having an irregular schedule (I work at a 24hr bureau) is the unexpected pleasure of having a free day in the middle of the week that allows me to have a long leisurely lunch. This plate is so easy to make:
Half pound of pork steaks, cherry tomatoes, carrots, peppers, asparagus, garlic.
Season the meat. Soak the meat in a mixture of water, salt, and lime juice. That way the salt and lime taste saturate the meat and there is usually no need to sprinkle more salt on top. But always taste the final product before serving, if in doubt.
Meanwhile, grill the vegetables in a shallow pool of olive oil until they are golden. I grilled the garlic gloves whole instead of chopped because they release a sweet flavor when cooked within their peels.
In another pan, sautée the steaks until golden in olive oil. Sprinkle your choice of herbs. I like Thyme and Rosemary.
And then, the perfect companion: Cucumber Agua Fresca. Bon Appétit.
